A great way to use up your leftover vegetables from a Sunday roast but you can add anything you want, mushrooms, peppers, spring onions – just mash it all in and enjoy!

What’s in it?

  • 500g cooked potatoes
  • 2 large carrots – diced and cooked
  • 1 small green cabbage – cooked
  • Any other leftover vegetables
  • ½ bottle Reggae Reggae sauce
  • 50g butter
  • 2 tbsp vegetable oil

How’s it made?

  1. Heat the oil and butter in a pan then add the cooked vegetables (you may have to do 2 batches). Using a potato masher crush them all together and into the hot butter, add the Reggae Reggae sauce
  2. On a medium heat fry the mixture, turning occasionally (you want some crispy bits) until browned and heated through
  3. Serve on its own as a great snack or as a side dish to some sticky chicken or sausages
