Blueberry Peach Pie

Everyone loves dessert right? When you are away at college you probably miss homemade desserts, especially pie. Did you know that pie is not only inexpensive to make but it is actually really easy? Rather than spending 30 minutes making a crust from scratch opt for prepared pie crust that you can keep in the freezer until you are ready to use it. One must try pie recipe is the blueberry and peach pie. This pie is sweet, a little tart and the addition of cinnamon elevates it to new heights. All you need are a few simple ingredients and some time.

What’s in it?

  • 2 store bought pie crusts, thawed
  • 1 can peaches
  • 1 small peach
  • Fresh blueberries
  • ¼ cup brown sugar
  • 2 teaspoons ground cinnamon
  • ½ teaspoon vanilla extract

How’s it made?

Preheat oven to 350 degrees F.

Place one pie crust into a round aluminum pan (pie crust may come in a tin).

Lay the second pie crust flat and cut into 1 inch thick slices or cut out pieces in any desired design.

Peel peach and remove the pit.

Slice the peach and set aside.

In a large bowl add the canned peaches along with the canning juices.

To the canned peaches add the brown sugar, cinnamon and vanilla extract. Stir until combined well.

Rinse about two handfuls of blueberries and pat dry.

Add to the pie filling and mix to coat with sugar syrup formed in the bowl.

Pour the pie filling into the crust and arrange the fresh peaches on top.

Carefully place the second crust on top and press the edges to seal.

Place pie onto a baking sheet and bake in the oven for 20 minutes or until he crust is golden brown.

Remove from the oven and allow to cool.

Slice the pie and devour.

This blueberry peach pie is absolutely amazing. The canned peaches and blueberries create this wonderful flavor combination and the fresh peaches on top maintain some bite for variation in texture. The burst of blueberries is also a nice touch. Making a quality dessert in college is completely possible. You just have to take advantage of inexpensive ingredients, combine them with fresh ingredients and the result will be something great. For an extra special touch add a little cinnamon sugar to the top of the pie before baking for a caramelized exterior.
