Bagel Breakfast Sandwich – Two Ways

A high quality portable breakfast is hard to come by. Breakfast is often a sit down meal that requires a fork and knife. Although true, there are really great ways to enjoy all that breakfast has to offer on the go. One of those is the bagel breakfast sandwich. When you have a whole wheat bagel and a few inexpensive ingredients all things are possible. Rather than providing you with one bagel breakfast sandwich recipe, how about two? One is simply ham, egg and cheese but lightly toasting the bagel and warming up the ham in a hot pan transforms plain deli meat into something more special. As for the second version, spinach is used along with bacon and cheese for all the college athletes out there. Continue on to learn how to make these two very delicious, quick and easy breakfast sandwiches.

What’s in it?

Version 1:

  • 1 whole wheat bagel
  • 2-3 slices of deli ham
  • 2 eggs
  • Shredded cheddar cheese
  • Vegetable oil
  • Salt, to taste
  • Pepper, to taste

Version 2:

  • 1 whole wheat bagel
  • Small handful of spinach, fresh or frozen
  • 2 slices bacon
  • 2 eggs
  • Shredded cheddar cheese
  • Salt, to taste
  • Pepper, to taste

*Makes 1 sandwich

How’s it made?

Version 1:

  1. Beat the eggs and season them with some salt and pepper (be generous with the pepper).
  2. Heat a small pan over medium low and drizzle some oil on the bottom to prevent the eggs from sticking.
  3. Add the eggs.
  4. When eggs starts to firm up fold in half, allow to cook for 2 minutes or so and then fold again.
  5. Sprinkle with cheddar cheese and cook until the cheese melts.
  6. Remove egg from the pan and add the ham. Cook until the edges get nice and brown. Remove.
  7. Add another drizzle of oil to the pan if needed and toast the inside of the bagel.
    Sprinkle the top of the bagel with a little cheese, flip and allow the cheese side to brown.
  8. Assemble the sandwich and eat.

Version 2:

  1. Beat the eggs and season them with salt and pepper.
  2. Heat a small pan over medium low and drizzle some oil on the bottom to prevent the eggs from sticking.
  3. Add the eggs.
  4. When eggs starts to firm up fold in half, allow to cook for 2 minutes or so and then fold again.
  5. Sprinkle with cheddar cheese and cook until the cheese melts.
  6. Remove from the pan and add the bacon.
  7. Cook until brown and crispy.
  8. Add spinach to the pan with the bacon fat and warm through.
  9. Season and stir.
  10. Remove from the pan.
  11. Assemble and serve.
