Beef Enchilada Bake

The beef enchilada bake is spectacular! This bake is cheesy, meaty and spicy but also packed with nutrients. You have your protein thanks to the ground beef and black beans, calcium from the cheese and some essential vitamins too. There is also the tortillas which satiates that carb craving that arises as the day come to a close. All in all, it is a well-rounded dish that brings Mexican flavors to your kitchen. The best part is, anyone can make this meal, even if you aren’t the best cook. It is that foolproof. Here’s how to make this delicious meal.

What’s in it?

  • 1 lb. lean ground beef
  • 1 small pack of corn tortillas
  • 1 small onion, chopped
  • 1 19 oz. can enchilada sauce
  • 1 can black beans, rinsed and drained
  • 1 14.5 oz. can diced tomatoes
  • 1 ½ cups frozen or canned corn
  • 2 teaspoons chili powder
  • Shredded Mexican blend cheese
  • Vegetable oil
  • Salt, to taste
  • Black pepper, to taste

How’s it made?

Drizzle oil in a pan and heat over medium high.

Add the chopped onion and cook until softened.

Crumble the ground beef into the pan with your hands.

Season with salt, pepper and chili powder. Use a spatula to incorporate seasonings and break apart the ground beef.

Cook the beef until browned. About 10 minutes.

When beef is browned pour in the diced tomatoes. Stir and cook for a few additional minutes.

Preheat oven to 350 degrees F.

Coat the bottom and sides of a large baking dish with vegetable oil to prevent sticking.

Create a layer of tortillas on the bottom of the dish. Add the meat and onion mix and top with half of the enchilada sauce.

Create another tortilla layer on top. Add a layer of corn and black beans.

Pour over the remaining enchilada sauce and top with cheese.

Bake in the oven for 30 minutes or until cheese is melted and the surface is golden.

Allow to cool for a few minutes and serve.

This is a fantastic recipe that you will be obsessing over. Every bite is so delicious and after one serving you will be stuffed. That first layer of tortilla on the bottom of the baking dish gets super crispy during bake time and everything above that is juicy, tender and gooey. Leftovers also taste fantastic and this beef enchilada bake will last in the fridge for up to 3 days!
