Black Bean Quesidillas with Guacamole

It is completely possible to make a super inexpensive lunch or dinner in 15 minutes. One of those options is black bean quesadillas with guacamole. This meal idea in particular is also vegetarian for those who do not eat meat. The quesadillas are super cheesy and have that wonderful black bean taste and the guacamole brings some spice to the dish along with richness and creaminess. The whole dish has this undeniable freshness that is absolutely delicious. It is a great vegetarian meal to make in a hurry when you have very few ingredients on hand.

What’s in it?

The Quesadilla:

  • 2 8-inch flour tortillas
  • ½ can of black beans, rinsed
  • ¼ cup Monterey jack cheese
  • Jarred salsa
  • Vegetable oil
  • Sour cream, for serving

Guacamole:

  • 1 avocado
  • 1 tablespoon finely chopped onion
  • 1 tablespoon jarred salsa
  • 1 tablespoon lemon or lime juice
  • Hot sauce, to taste
  • Salt, to taste
  • Black pepper, to taste

How’s it made?

  1. Slice the avocado in half. Remove and discard the pit.
  2. Use a spoon to scoop the avocado flesh into a small bowl.
  3. Mash with a fork until desired consistency is achieved.
  4. Add the chopped onion, salsa, lemon juice and hot sauce to taste. Season with salt and pepper.
  5. Mix with a fork, cover and place it into the refrigerator to chill.
  6. As the guacamole is chilling make the quesadillas:
  7. Add the beans, cheese and about 2 tablespoons of salsa into the bowl and mix.
  8. Spread onto one tortilla and place the second tortilla on top.
  9. Heat a large skillet over medium heat and add a drizzle of oil.
  10. Carefully place the quesadilla into the skillet and cook until golden. About 3 minutes.
  11. Flip and brown the other side.
  12. Remove from the skillet and allow to cool for a few minutes.
  13. Cut into 4 pieces.
  14. Plate and serve with guacamole, sour cream and salsa.

When the quesadillas are done you have a nice vegetarian meal that only required about 6 minutes of cook time. The meal is so simple and very well balanced. To create the perfect bite add a dollop of salsa, guacamole and sour cream to each slice of the quesadilla. If you do not have black beans on hand, no problem. A cheese quesadilla is just as tasty. Pinto beans can also take the place of the black beans as well as refried beans.
